How Tasmania and Lauderdale Beach Shapes Our Malt Vinegar!
There is a common belief that vinegar is made entirely inside the bottle. But down on the edge of Lauderdale Beach where the untamed southern winds roll off Frederick Henry Bay, we do things differently. Our malt vinegar isn’t just aged by the sea – it is actively shaped by it.
Every day, our wooden casks sit exposed to the elements, their outer staves touched by ocean spray, sea winds, and seasonal rains. To the untrained eye, they are just weathered barrels. To us, they are living, breathing bioreactors capturing a liquid snapshot of the Tasmanian coastline.
Capturing the Coastal Sea Breeze:
The wet wood acts like a sponge, drawing in a invisible cloud of native coastal microbes carried on the sea breeze:
Coastal Wild Marine Yeasts: Unique, salt-tolerant yeast strains like Rhodotorula or Debaryomyces
that thrive near the ocean air and migrate into the damp grain. They work slowly, throwing off complex, briny esters and deep, earthy phenols that you won’t find in any commercial vinegar.
We don’t use laboratory-isolated cultures to ferment our vinegar. Instead, we pull back the solid bungs, seal the openings with breathable mesh, and let the wild microbial terroir of Lauderdale do the work.
Wild Acetobacter:
The crucial acetic acid bacteria native to our coastal ecosystem settle into the wood. Working alongside native lactic acid bacteria, they create a layered, multi-dimensional acidity – marrying a sharp, clean vinegar punch with a soft, rounded sourness.
Shaped by the Tasmanian Seasons:
Our climate acts as a natural biological filter, steering the flavour profile through two distinct annual phases.
During our warm summers (around 20°C), the microbes surge to life. They rapidly consume oxygen from the sea breeze, building a funky, robust foundation rich in fruity, complex aromas. When the cold winter drops to 5°C, the biology pauses. The microbes go dormant, allowing the harsh acids and rich oak tannins to slowly meld, smooth out, and mature in the cold coastal air.
What evaporates out of the wood is the harshness; what stays behind is pure Tasmanian character. The result is a malt vinegar that carries a distinct, funky, complex aged flavour with a subtle hint of the sea – a profile that is impossible to replicate anywhere else on Earth.

GLUTEN…… WHAT GLUTEN?
We have had it tested, and we can honestly say that our first release tastes great. There is no detection of Gluten: Nil Detection.
I submitted Deacons Tasmanian Malt Vinegar to Symbio Laboratories for allergy testing.
Briefly, the ELISA test for gluten analysis delivered a result of “Gluten Not Detected”.
