When I first ventured into the world of brewing malt vinegar it was exciting... and
overwhelming. I was assaulted with a sea of information about vinegar in general, but there was surprisingly little specifically about malt vinegar. It felt like a well-guarded secret, with
essential details slipping through the cracks.
With several years of experience now and a background in fermentation studies from
university, I’ve come to appreciate the chemistry and science that underpins this
fascinating process.

Fermented foods are firmly establishing themselves in the mainstream as gut health

diversity, and local production.
